Cool Down with Summer Drink Recipes

sangriaI know you have been sweltering in the heat right along with me. As I thought of what to feature this week I was distracted by the heat and kept thinking, "I need something to drink" which prompted me with the idea to give you a few cool refreshing drink recipes that you can share and enjoy with family and friends.

The first two are summer drinks you can make at home with simple ingredients we all keep in our pantry. The third recipe is a light cocktail sangria you can make for your summer entertaining.

Iced Tea II

  • Makes 8 servings
  • 8 cups of water
  • 3 orange pekoe tea bags
  • ¾ cup of white sugar
  • ½ cup lemon juice

In a large saucepan, heat water to a rapid boil. Remove from heat and drop in the tea bags. Cover and let steep for 1 hour.

In a large pitcher, combine the steeped tea and the sugar. Stir until sugar is dissolved, then stir in lemon juice. Refrigerate until chilled and serve.

Lemonade

  • Makes 5 servings
  • 4 lemons juiced
  • 1 quart of water
  • ½ cup of white sugar

In a 2 quart pitcher, combine the lemon juice, water and sugar. Stir until sugar is dissolved. Chill in refrigerator and serve.

Perfect Sangria

  • Makes 12 servings
  • Navel oranges, thinly sliced
  • 2 lemons, thinly sliced
  • 2 limes, thinly sliced
  • 1 pear, cored and chopped
  • 1 cup fresh strawberries, sliced
  • 1 (20 ounce) can pineapple chunks in juice
  • ½ cup white sugar
  • ½ cup of Cointreau or other orange liqueur
  • 1 cup white rum
  • 1/3 cup of coconut flavored rum
  • 2 cups of orange juice
  • 2 bottles of red wine, chilled
  • ½ can frozen pink lemonade concentrate, thawed
  • ¼ cup of lemon juice
  • 2 tablespoons lime juice
  • 1 cup lemon-lime soda

Place the oranges, lemons, limes, pear, strawberries, pineapple chunks and juice, and white sugar into a large bowl. Pour the Cointreau, white rum, coconut-flavored rum, and orange juice over the fruit. Stir gently to dissolve the sugar. Cover and refrigerate for 2 hours

Add the red wine, pink lemonade concentrate, lemon juice, and lime juice. Cover and refrigerate for 2 hours, or overnight.

Before serving, add the chilled lemon-lime soda. Serve over ice, spooning the fruit into the glass with the liquid. Garnish with an orange slice or maraschino cherries and enjoy.
